Spicy Creamy Chicken Recipe

This spicy creamy chicken recipe is made with a mixture of delicious flavors.
2 1/2 Tablespoons olive oil, divided
1 pound uncooked pasta
1 pound boneless skinless chicken breast, cut into 3/4-inch chunks
1/3 cup onion, chopped
1 teaspoon garlic, minced
2 cups prepared alfredo sauce
1 Tablespoon chipotle chile in adobo, minced
2 teaspoons chili powder
2 teaspoons maple syrup
1 cup broccoli florets, washed and cut into bite sized pieces
1 cup cherry tomatoes, washed
Bring a large saucepan of water to boil over high heat.
Add 1/2 teaspoon salt and 1 tablespoon olive oil.
Once boiling, add pasta and cook according to package directions.
When pasta is done, drain and set aside in saucepan.
While pasta is cooking, heat the remaining 1 1/2 tablespoons olive oil in a large skillet set over medium-high heat.
Add chicken and cook for about 4 minutes, until cooked through.
Remove chicken from the skillet and set aside.
Reduce the skillet heat to medium and add onion. Cook for 5 minutes, until transparent. Stir occasionally.
Add the garlic and cook 30 seconds, until fragrant.
Stir in the Alfredo sauce, chipotle chili, chili powder, maple syrup and remaining 1/2 teaspoon salt.
Add the broccoli and toss to coat.
Cover slightly and cook over medium-high heat for 3-5 minutes, until broccoli is tender and sauce is bubbly.
Add the chicken and cherry tomatoes and carefully toss to combine.
Pour the chicken and sauce over the pasta in the saucepan and gently toss until well coated and combined.
Spoon pasta into a large serving platter.
