Grilled Scallops Recipe

A grilled scallop recipe with a creamy yellow pepper sauce.

Ingredients

3 tablespoons olive oil
1 small onion, diced
2 yellow peppers, seeded & sliced
1 clove garlic, smashed
1 teaspoon dried thyme
1 cup vegetable stock or 1 cup fish stock
1/4 cup whipping cream
1 teaspoon sugar
salt & freshly ground black pepper
20 fresh large scallops

Directions

1Heat 2 tbsps of the oil in a saucepan; add onion& cook gently until soft, about 5 minutes.

2 Add peppers, garlic& thyme and continue cooking for another 5 minutes.

3 Add the stock, bring to a boil, reduce heat& simmer for 20 minutes or until the peppers are very soft.

4 Puree the pepper mixture, return to a clean pan, add the cream& sugar and bring to a boil.

5 Season to taste, reduce heat& simmer for 5 minutes.

6 Meanwhile, season the scallops with some salt and pepper.

7 Sear the scallops for 2 minutes on the first side on a hot grill.

8 Turn & cook for another minute or until just opaque in the center.

9 Serve with sauce.
