Chickpea And Garlic Sausage Bruschetta Recipe

This Chick Pea and Sausage Bruschetta recipe is one to add to your list of tasty appetizers.Exact measurements are not given as this will depend on the amount you want to make, but you are supplied with a combination of ingredients o assemble, to your own taste, when you are preparing this tasty appetizer.

Ingredients

Amounts will vary according to how many bruschetta you are making.
You be the judge of the amounts and use the following ingredients –more or less– to your personal taste.
Canned sweet red peppers and pimentos
1 can chickpeas
Garlic sausage cut into small bite sized pieces. Use your favorite sausage, as long as it is pre-cooked and can be sliced and eaten cold.
Olive oil
A few chopped sprigs of Italian parsley or curled parsley
Salt & pepper to taste
Ciabatta baguette

Directions

Chop the sweet peppers and pimentos into small pieces.

Chop the garlic sausage into bite sized pieces.

Chop the sprigs of fresh parsley.

Put all the chopped ingredients into a mixing bowl.

Rise and drain the chickpeas, then add them to the mixture.

Drizzle with a little olive oil, salt and pepper and mix thoroughly.

Cut up a wide ciabatta baguette into small toasts.

Brush on olive oil to the top of each of the toasts and bake on low heat until golden brown. Be careful not to burn! Take out of the oven and let cool.

Spoon the mixture on top of each toast and serve without heating the topping.
